Ingredients

  • 4 slices white bread or sandwich bread
  • 2 tbsp green coriander-mint chutney
  • 2 tbsp butter, softened
  • 1 medium boiled potato, thinly sliced
  • ½ small cucumber, thinly sliced
  • 1 small tomato, thinly sliced
  • ¼ small onion, thinly sliced
  • ½ cup grated processed cheese or mozzarella
  • 1 tsp chaat masala
  • Pinch black salt (optional)
  • Butter for grilling

  • Use soft white sandwich bread for authentic Mumbai street-style texture. Amul processed cheese works best. If available, use sandwich masala instead of chaat masala for a more traditional flavor. Beetroot slices and capsicum can also be added

Method

  1. Spread butter on one side of all bread slices. Apply green chutney over the butter.
  2. Layer boiled potato slices on two bread slices and sprinkle chaat masala.
  3. Add tomato slices, grated cheese, cucumber, and onion. Sprinkle more chaat masala and a little black salt.
  4. Cover with the remaining bread slices, chutney side facing inward.
  5. Lightly butter the outer sides of the sandwich.
  6. Grill on a sandwich toaster, grill pan, or skillet over low-medium heat for 4 to 5 minutes per side until golden and crisp.
  7. Cut into halves or quarters and serve hot with ketchup and extra green chutney.
