This Week’s Bite
Mumbai's most reliable sandwich
The Bombay Grilled Sandwich proves that great street food does not need complicated ingredients. Layers of potato, cucumber, tomato, onion, chutney, cheese, and spice come together between slices of bread, creating a sandwich that is crisp, filling, and deeply satisfying.
Teffix take:The green chutney does most of the heavy lifting. Without a bold, fresh chutney, the sandwich can taste flat. A generous spread and a final sprinkle of chaat masala are what separate a great Bombay sandwich from an average one.

Mumbai Street-Style Grilled Sandwich
A classic Mumbai street-food sandwich layered with green chutney, butter, potatoes, cucumber, tomato, onion, cheese, and chaat masala, spread with butter and grilled until crisp and golden.
Ingredients
- 4 slices white bread or sandwich bread
- 2 tbsp green coriander-mint chutney
- 2 tbsp butter, softened
- 1 medium boiled potato, thinly sliced
- ½ small cucumber, thinly sliced
- 1 small tomato, thinly sliced
- ¼ small onion, thinly sliced
- ½ cup grated processed cheese or mozzarella
- 1 tsp chaat masala
- Pinch black salt (optional)
- Butter for grilling
Indian sourcing notes
- Use soft white sandwich bread for authentic Mumbai street-style texture. Amul processed cheese works best. If available, use sandwich masala instead of chaat masala for a more traditional flavor. Beetroot slices and capsicum can also be added
Method
- Spread butter on one side of all bread slices. Apply green chutney over the butter.
- Layer boiled potato slices on two bread slices and sprinkle chaat masala.
- Add tomato slices, grated cheese, cucumber, and onion. Sprinkle more chaat masala and a little black salt.
- Cover with the remaining bread slices, chutney side facing inward.
- Lightly butter the outer sides of the sandwich.
- Grill on a sandwich toaster, grill pan, or skillet over low-medium heat for 4 to 5 minutes per side until golden and crisp.
- Cut into halves or quarters and serve hot with ketchup and extra green chutney.

Kitchen Hack
Keep your sandwich crisp, not soggy.
Tomatoes release moisture as they sit, which can soften the bread and dull the crunch. Lightly salting them draws out excess water before assembly, helping the sandwich stay crisp during grilling.
Try this before assembling
- Lightly salt tomato slices
- Let them rest for 5 minutes
- Pat dry with a paper towel
- Layer tomatoes between potato and cucumber slices
