Comfort food without heaviness

A good lemon coriander soup should feel clean, not watery. The secret is using coriander stems in the broth and adding lemon only after switching off the flame.

Teffix take:

Do not boil lemon juice for long. Fresh lemon at the end keeps the soup bright and restaurant-style.

Ingredients

  • 250g boneless chicken
  • 5 cups water or light stock
  • 1 tbsp garlic, finely chopped
  • ½ cup carrot, finely chopped
  • ½ cup cabbage, finely shredded
  • 2 tbsp coriander stems, chopped
  • ¼ cup coriander leaves
  • 1½ tbsp lemon juice
  • ½ tsp black pepper
  • 1 tsp cornflour mixed with 2 tbsp water, optional
  • Salt to taste

Indian sourcing notes

  • Use boneless chicken breast for a lighter soup or thigh for more flavor. Coriander stems are important because they add deeper flavor than leaves alone.

Method

  1. Simmer chicken in water with salt, pepper, and coriander stems until cooked. Remove chicken, shred it, and keep the broth. In another pan, sauté garlic for a few seconds, add carrot and cabbage, then pour in the broth. Simmer for eight minutes. Add shredded chicken. Add cornflour slurry only if you want a slightly thicker soup. Turn off heat, add lemon juice and coriander leaves. Adjust salt and pepper before serving.

Use coriander stems like a flavor base.

Coriander stems hold more aroma than many people expect. They make clear soups taste deeper without adding cream or heavy spices.

Try this after cooking

Keep coriander stems in the freezer in a small box. They are useful for soups, stocks, pulao water, and dal tempering.

  • Wash stems well before chopping
  • Add stems while simmering broth
  • Use leaves only at the end
  • Balance lemon with black pepper

Light soups are back in weeknight cooking.

Clear soups are becoming popular again because they are simple, protein-friendly, and easier to digest than creamy soups. They also work well as meal prep.

What most cooks miss

The soup trend is less about restaurant starters and more about quick, light dinners that still feel complete.

  • Keep the broth clean and well-seasoned.
  • Use finely chopped vegetables for fast cooking.
  • Add acid at the end for freshness.
5

A fine ladle for cleaner soup serving.

This week’s recommendation is a soup ladle with a comfortable handle. It makes serving broth-heavy recipes easier and less messy.

Stainless Steel Soup Ladle

Approx. ₹150–₹400

A good ladle helps with soup, dal, rasam, kadhi, sambar, and stocks. Choose stainless steel with a deep bowl and sturdy handle.

Honest verdict

  • Simple but useful for daily cooking.
  • Choose one-piece steel if possible.
  • Avoid very shallow ladles for soup.
